ROASTED GARLIC + DUNGENESS CRAB SOUP

SERVING SIZE: 6 oz. per cup or 12 oz. per bowl

Dungeness Crab Meat prepared with Herb Paste and Parmesan Cheese
Fennel Frond Garnish
FROM YOUR PANTRY
Salt + Pepper to taste
1. Heat soup base over medium heat, stirring occasionally with a rubber spatula to prevent scorching.
2. Divide the crab meat mix evenly into separate cups or bowls.
3. When soup is extra hot (you need it hot enough to heat the crab meat mix), ladle it into the bowls. You can mix the crab in at this point, or when eating.
4. Garnish with fennel frond. Enjoy!
ABOUT THIS RECIPE
Newport is the Dungeness crab capital of the world, and it is the “major investor” in our signature soup. Our first chef, Bruce Jackson, adapted this recipe the creamy garlic soup his mother made for him as a child. He added the Dungeness crab for local flair, and Chef Charlie Branford modified with rice flour roux so the soup is gluten-free. To this day only “The Enriques” make the soup base at Local O, which keep is consistently outstanding. This is our most requested and most published recipe!
