Coho Salmon Sliders with fries

Local Ocean’s Classic
COHO SALMON SLIDERS
with Fries

TIME: 30 minutes

SERVING SIZE: 3 coho salmon patties per person

Tartar Sauce

FROM YOUR PANTRY
3-4 tbsp olive oil for cooking
Sriracha or similar to spice up the tartar sauce (optional)
Additional toppings for the sliders (optional)

STEPS
1. Cook the fries: Pre-heat oven to 450 degrees. Toss the fries in a little cooking oil and spread them out on a thin baking pan in a single layer.  Use multiple baking pans if necessary. When oven is ready, bake fries for 15 minutes. Stir well, then bake another 10-15 minutes until crispy and golden.

Alternatively, you can use an air fryer - cook them to golden brown and crispy (14-20 minutes at 400 degrees).

2. When fries have about 10 minutes left to cook, start the slider patties. Heat a large nonstick pan or skillet over medium-high heat. When the pan is hot, add 2 tbsp olive oil (3 tbsp for 4-person serving). Heat the oil until it is shimmering (but not smoking) and add the salmon patties to the pan. Cook for 2-3 minutes on each side, browning them well.

3. While the patties are cooking, toast the slider buns – drizzle with a little oil and toast them in a pan or skillet, or throw them in the oven for a couple minutes until they crisp up a little on the cut side.

4. Spread a thin layer of tartar sauce on the buns (at the restaurant we spice up the tartar by mixing in sriracha or chipotle), then top with the salmon patties and lettuce. You can add other garnishes from your home pantry as desired (like pickles or tomatoes). Serve with fries. Enjoy!

ABOUT THIS RECIPE
We strive for zero waste at Local Ocean, and this dish allows us to use ALL the salmon we fillet - we scrape the salmon carcass and use all the trimmings to make the patties, some of the meat is smoked for extra flavor.  This is a fun and simple way to prepare salmon at home and kids love it too!
